The Blanc de blancs Extra-Brut 2018 from Philipponnat is an exceptional Champagne, made exclusively from Chardonnay from the best chalk terroirs of the Champagne. This wine is a Rareté in the house's range, generally dominated by Pinot Noir. 2018 was a particularly dry year, enabling high-quality harvests with high yields, favoring optimal ripening of the grapes. Traditional vinification and six years' aging on lees reveal the wine's complexity, while preserving its purity and balance. A dosage of Extra-Brut (4.25 g/l) maintains freshness and vinosity without masking the wine's character. On tasting, La robe is a very pale gold, with a string of fine bubbles. The nose is delicate, blending notes of citrus peel and elderflower, evolving towards pastry and fresh almond aromas. On the palate, the wine is fresh and creamy, with citrus and citron flavors, followed by light touches of licorice. The finish is persistent, with a hint of iodine and good length. This Blanc de blancs is ideal as an aperitif or to accompany dishes such as fish or shellfish, especially lobster or shrimp, whether poached or in sauce with beurre blanc. It can be kept for five years and will gain in complexity with age.
