Saint-Emilion Grand Cru Classé B The 2018 vintage is a great wine year in Bordeaux. It is characterized by two very distinct climatic periods: a wet start to the season and a second particularly dry period from July. The vines thus took advantage of these conditions and by the end of September, the grapes were very concentrated with thick skins. The plots of Château Troplong-Mondot were all harvested at their optimum maturity. Blend of the 2018 vintage: 85% Merlot, 13% Cabernet Sauvignon, 2% Cabernet Franc. The robe is a beautiful deep red color, with brilliant purple highlights. The nose reveals a very expressive bouquet of black fruits, blackcurrant and blueberry, peppery spices, cocoa and violet. On the palate, it is ample and shows a meticulous touch, releasing flavors of small red fruits and licorice. Its tannic structure gives it precision and elegance, making it rise in power and freshness to a complex finish. A great success for this illustrious property. Food and wine pairing: Château Troplong-Mondot 2018 will be wonderful with beef Wellington with black garlic, wild boar leg confit, duck breast Rossini, grilled leg of lamb or Mughal curry with mutton. For an agreement with cheeses, privilege those with pressed and uncooked paste: cantal, old mimolette, morbier, saint-nectaire and tomme of Savoy. It can also be enjoyed with Brie de Meaux, Gouda or Salers. It will be particularly delicious with a crunchy three-chocolate entremet, a pear-caramel cake or a chocolate bavarois. Cellaring potential and tasting: Château Troplong-Mondot 2018 has great ageing potential, and will reach its peak between 2035 and 2040. However, it lends itself wonderfully to tasting now. To do so, take care to place the bottle the night before in the serving room at room temperature. Open it and decant it at least 4 to 5 hours before tasting. The bottles will be kept in the cellar protected from the light, lying down, at an optimal hygrometric degree of 70%.
