The Domaine Daniel Bouju - 30 hectares mainly of Ugni Blanc but also a few plots of Folle Blanche and Montils - is located in the commune of Saint Preuil in the very heart of the Grande Champagne. This Premier Cru de Cognac produces eaux-de-vie of great finesse, with a delicately floral bouquet and endless length. They also require longer ageing to reach full maturity. To retain as many primary aromas as possible, the wines are distilled with the fine lees. Then the new eaux de vie are, in part, housed in new Limousin-type oak barrels, 350 to 400 liters, for the first few years of their youth, to shape their fiery character. Finally, they spend a large part of their ageing in rust-coloured barrels in damp cellars, where they acquire the subtle aromas of evolution and, for the oldest, up to the famous Charentais rancio. The final blend of this XO Carafe N°27 is made up of Cognacs aged 25 years or more. It sports a beautiful amber-brown color. It opens with aromas of evolution, damp earth, coffee, nuts and smoke, before revealing its bewitching side of sweet spices, nutmeg, clove, cinnamon and a hint of vanilla and caramel. The palate is powerful yet elegant, with notes of muscat grapes, prunes and candied angelica, ending with a long, delicate rancio finish. Bitter and fresh will combine wonderfully with the rancio of this Cognac XO carafe N°27 ... a dark chocolate/fresh mint mousse will be perfect. And for meat lovers, opt for a roast quail with grapes.
