The Domaine Daniel Bouju - 30 hectares mainly of Ugni Blanc but also a few plots of Folle Blanche and Montils - is located in the commune of Saint Preuil in the very heart of the Grande Champagne. This Premier Cru de Cognac produces eaux-de-vie of great finesse, with a delicately floral bouquet and endless length. They also require longer ageing to reach full maturity. To retain as many primary aromas as possible, the wines are distilled with the fine lees. Then the new eaux de vie are, in part, housed in new Limousin-type oak barrels, 350 to 400 liters, for the first few years of their youth, to shape their fiery character. Finally, they spend a large part of their ageing period in rust-coloured barrels in damp cellars, where they acquire the subtle aromas of evolution and, for the oldest, all the way to the famous Charentais rancio. The final blend of this XO Carafe Prince includes Cognacs aged from 15 to 25 years. It presents itself with a beautiful bright orange color. It opens with subtle notes of undergrowth and dried flowers, before moving on to richer aromas of fruit Secs, prune and vanilla. The palate is suave, very gourmand; we find the power and roundness of prunes, apricot Secs but also empyreumatic scents of blond tobacco and cigar box until the finish on old leather and spices. Give this Cognac XO Carafe Pince de Daniel Bouju a roast woodcock with bacon ... and experience a magical moment.
