This is a blended Champagne made from 30% Chardonnay grapes and 70% Pinot Noir grapes, exclusively from Bouzy classified Grand Cru. This is a Champagne made in the great exceptional years exclusively and is therefore a single-cru and single-year, Millésimé. La robe is pale golden yellow with bright gold highlights. On the nose: notes of chalk, hazelnut, acacia honey, pruned almond, white vine peach and lychee. On the second attack: citrus notes such as pineapple or Menton lemon, Alsace mirabelle plum with a hint of candied lemon zest. The palate reveals hints of Menton lemons and Florida grapefruit with a fine touch of southern Italian bergamot. Superb, mineral finish with a fine touch of salinity. Dining and wine pairing: enjoy around 10°C with goose foie gras or Gers duck canapés, smoked salmon sushi or maki, Spanish Pata Négra and Charentais melon wraps. Extra on fish in sauce, or even grilled a la plancha. To be cellared at around 16 to 18°C, away from light and vibrations, bottle horizontal. Don't forget to do a few tastings during this ageing to measure the qualitative evolution of this exceptional Champagne.
