Description

The Champagne Volupté is a Blanc de blancs emblematic of the great Vallée de la Marne, reflecting every year the expression of the Chardonnays that flourish on the sunny hillsides of Cumières. Anchored in shallow soil, the vines draw their energy and minerality from the Campanian chalk. The vines, around 30 years old, are located in the village of Cumières, classified Premier Cru, on the southeast-facing lieux-dits "La Montagne" and "Les Tourne-Midi". The soil is thin and very chalky, with Campanian chalk outcropping at an altitude of 120 meters. The blend is 100% Chardonnay, with a dosage of 4 g/L Extra brut. Vinification begins with hand-picking of the grapes at optimum ripeness, followed by sorting and traditional pressing with a Coquard press. Only the "Tête de Cuvée" juices are selected for parcel-by-parcel vinification by gravity. Fermentation is carried out with indigenous yeasts in demi-muid and oak foudre, followed by ageing on the lees. Cellar aging on laths lasts 84 months, and the wines are neither filtered nor fined. On tasting, the nose presents refined aromas of white fruit, while the attack on the palate is chiselled with a creamy texture. White fruit flavors combine with notes of candied citrus and hazelnut. The finish is long and elegant, with a chalky minerality typical of great Chardonnays. This Champagne goes perfectly with delicate dishes such as langoustines from Guilvinec or old Parmesan cheese.
