A rosé champagne elaborated according to the ancestral method of the assembly. This Champagne Rosé is a blend of 60% Chardonnay, Grand Cru from Cramant, and 40% Pinot Noir, Premier Cru from Bergères-les-Vertus and Grand Cru from Bouzy. Vinification takes place in temperature-controlled vats, then the wines spend 36 months on lees before disgorgement and receive a moderate dosage of 6g/L. The wine is concentrated and precise. Delightful notes of Bouzy red, appear immediately, such as rose, peony and raspberry. The palate, marked by the dominance of Chardonnay, is ample and tender and rests on a slightly tannic structure of the Champagne côteaux. The finish is long and fresh, and assumes its racy character. This Rosé blend is perfectly suited to a fine plate of sushi and sashimi, or even a "Boule de Lille", 24-month-old Extra mimolette.
