Vallein Tercinier Lot 30 Single Cask - Cognac Hors d'Âge

Vallein Tercinier is a totally independent, family-run house which, for over a century and a half, has distilled and matured eaux-de-vie of all vintages to offer enthusiasts the finest selection of Cognac blend and Cognac Brut cask. The Cognac selected here is a Brut de fût (i.e. the Cognac has not been reduced, it has been bottled at its natural degree, here 40.6% vol.) exclusively from the Cognac cru, the Petite Champagne. This cru has a similar soil type to Grande Champagne, composed of soft limestone and sometimes "sticky" clays, but with a more marked maritime influence. The result is a very fine, very light eau de vie, with a fruity/floral bouquet. This Cognac de Petite Champagne "Lot 30" aged 65 years (cask N°030 then housed in dame jeanne - bottled 1995) in Limousin oak casks, then selected by the cellar master for its finesse and complexity, its perfect balance, its aromatic singularity and above all for the gustatory pleasure provided. This is a limited edition, unchill-filtered and natural in color, with only 238 bottles produced. The nose is bewitching ! We're fascinated by its aromas of prunes, figs, licorice, dried almond and that characteristic of very Old Cognac: rancio. The palate is always generous, with candied fruits, Secs grapes, gingerbread and coffee. This Petite Champagne "Lot 30" will make an unforgettable whole raw foie gras escalope just pan-fried.
