The cuvée Bollinger PN is a singular vision of Pinot Noir, the very essence of Champagne Bollinger and one of the House's pillars. Its ambition is to highlight the different expressions of Pinot Noir according to its terroir of origin, each edition a new interpretation. It is becoming a permanent reference in the range. PN TX17, after VZ15 and VZ16, is the third version. This cuvée PN TX17, 100% Pinot Noir therefore, is the essence of the Tauxières terroir (hence TX, when VZ stands for Verzenay) that gives it tension, precision and complexity. Some grapes from Verzenay and Avenay complete this blend whose base year is 2017 (hence TX17) and whose wines from Réserve, up to the 2006 vintage, are all kept in magnums. The wines spend over 6 years on laths before disgorging and receive a light dosage of 4g/L. The nose is discreet and subtle. Notes of dried roses, blond tobacco, licorice and Secs fruits mark a real aromatic richness and delicious evolution. The palate is generous, cooked apricot, peach and pineapple first, followed by acacia honey and sweet spices. Freshness arrives with the finish, where blackcurrant and citrus peel melt into salinity. A lively, straightforward and clean wine that will easily accompany poultry with candied apricots and glazed carrots.
